This module presents the history of etiquette and dining traditions, and

types of meal service for different situations. Students learn about

kitchen safety, measuring ingredients, and proper cleaning, and they

practice these skills in cooking and eating soup. After successfully

completing a worksheet on manners, students prepare and enjoy a

dessert recipe, while demonstrating good manners with this potentially

messy snack.

 

Later in the module, students combine cooking skills with decorative

touches. They prepare main dishes that feature a variety of tastes,

textures, colors, and shapes. Using these guidelines, as well as

nutritional information, they plan menus for breakfast, lunch, and dinner.

In addition, they learn how fine dining is enhanced with folded napkins,

candlelight, and other aesthetic elements. They also practice setting a

table for a formal dinner.

 

The module concludes with interesting facts about mealtimes in different

cultures and other time periods. Students also examine the importance

of manners, and explore careers in restaurants and other hospitality

industries.
